Braised White Beans
I absolutely love Zoe’s Braised White Beans and found a recipe that pretty much replicates the deliciousness of that dish. A big bowl of beans and rice with a piece of crusty white bread just seems to warm my soul on a cold, dark winter night. ENJOY! It is best to cook this in an oven proof dish, such as a dutch oven.
4 cans great northern beans, drained but not rinsed
3 cloves of garlic, pressed
1 onion, diced
4-5 springs of rosemary, tied in cheese cloth
1/4 cup olive oil, plus one glug
salt and pepper to taste
About a cup of broth, either chicken or veggie
Saute with onion on medium high heat in a glug of oil until soft, about 5 minutes. Add the garlic and cook for another minute, until fragrant. Add the beans, stock, rosemary and olive oil. Bring to a boil, then lower the heat to a simmer. Put lid on pan and simmer for an hour stirring occasionally. Once hour is done, mash the beans lightly, add salt and pepper, and place in a 300 degree oven for another hour.
Enjoy with bread, pita chips or rice.
