Yummy Recipe for a warm winter night
Here is a yummy recipe to warm a cold winter night. An assortment of colorful vegetables makes this a very elegant, yet simple dish, that may stand alone or be served with an entree of fish or meat. The vegetables are best roasted right before serving.
Roasted Vegetables with Tahini Dressing
Preheat oven 425 degrees.
You can pick whichever vegetables you would like. Here are some of my favorites…
Carrots…peeled…roast for 20-25 minutes
Asparagus and green beans…rinsed…roast for 10-15 minutes
Broccoli and cauliflower…cut into bite sized pieces…roast for 20-25 minutes
Beets and onions…peeled…cut into 3/4 inch wedges…roast for 40-45 minutes
Acorn Squash…halved, seeded, cut into 1 inch wedges…roast for 40-45 minutes
Toss vegetables in olive oil, until well coated. Toss once or twice while roasting.
Tahini Dressing
1/4 cup tahini
3 Tbs lemon juice
Pinch cayenne pepper
2 cloves garlic minced or pressed
2 Tbs olive oil
1 cup plain yogurt
Salt to taste
Whisk ingredients together until smooth.
Arrange vegetables and dressing on platter to serve. Salt and pepper to taste. ENJOY!
