Braised Cabbage and Apples

2 Tbs butter or ghee

1 apple, cored and cut into 1/2 inch dice (Granny Smith maintain their texture the best but I use any kind I have)

1/2 cup apple or pear cider

1 tsp fresh thyme leaves (I use dried if I don’t have fresh)

1 tsp caraway seeds

1 pound green or savoy cabbage, cored, and shredded

Melt butter over medium high in a large skillet or dutch oven. When foaming has subsided (if using butter, ghee won’t foam) add the apple and cook until just beginning to brown, about 5 minutes. Add the cider, thyme, and caraway seeds and simmer until slightly reduced, about 5 minutes. Add the cabbage and stir to combine. Cover and simmer until the cabbage is wilted, about 8-12 minutes, depending on cut. Season with salt and pepper. Enjoy.
